Waffles

Ingredients

Make the batter

Melt the unalted butter and let cool.

Place 2 egg yolks into a large bowl. Pour in milk and buttermilk. Whisk to combine. Sift in flour, baking powder and salt, whisk again to combine.

In a second bowl, whisk four egg whites to form stiff peaks. Then gently fold into the flour mixture. Then pour in the melted butter and gently fold in. Do not over stir, you don't want the waffles to become tough.

Pour roughly 1/3 cup of batter into a waffle iron and bake.
