Elderberry Syrup
- 3/4 c. Dried elderberries
- 3 c. Water
- 2 heaping Tbs. sliced fresh ginger
- 1-2 Cinnamon sticks
- 1 Large handful whole cloves
- 3/4 c. local raw honey
Place elderberries, water, ginger, cinnamon, and cloves and bring to a boil. Reduce heat to a simmer and let simmer until reduced by half (about 45 minutes).
Remove from heat and let cool. Strain through cheesecloth. Add honey to taste.
Transfer to a sterile container and seal tightly. Keep refrigerated for as long as 3 weeks.
